Cortado vs macchiato
The cortado carries more espresso; the macchiato carries more foam. Same beans, two different balances of coffee, milk and air.
The cortado is built to balance, not disguise: equal parts espresso and milk, textured just enough to round off the shot's edge. A macchiato skips the milk pour almost entirely - it's an espresso "marked" with a spoonful of foam, so the coffee stays front and centre and the cup stays small.
